These photos are from last Sunday. We made a recipe I haven’t made in ages – it’s for sweet potato ravioli, and it’s delicious, but most certainly a weekend meal. I roasted the sweet potatoes while F napped, and when she woke up we mashed them with some ricotta, some parmesan, a little basil and garlic and then, using egg wonton wrappers, we made large ravioli squares. E’s were perfection, and F’s were crooked but delicious. A simple cream sauce rounded them off, and everyone waddled off to bed afterwards. I finished up the leftovers today (which is probably stretching it a bit, but this isn’t a meal you want to eat multiple nights in a row). Delicious.
