A friend of ours got married this morning on 3.14 and I made some of the goodies for the rehearsal dinner and one of the pies served at the reception. The pie cookies were so much fun to make – our house was busy brainstorming flavors all week and when the decorating started every edible accessory was on the counter – marshmallows, chocolate shavings, graham crackers, coconut…and fondant “crusts” in lattice shapes or rustic.
E came up with the way to do apple pie by pointing out that it’s really just a pile of apples with cinnamon sugar on top…and so it was.
Getting into the fourth dozen we were reaching a bit…and came up with sweet potato pie.
And we couldn’t leave out key lime…although as everyone knows, it’s much better with an oreo cookie crust.
