E has a Junior Scout ceremony this afternoon. This is our cupcake riff on the Thin Mint cookie – chocolate cupcake stuffed in the center with mint chocolate ganache, and topped with mint buttercream frosting. And a little dark chocolate shavings for flair. Off to enjoy them now…
Update: Since the cupcakes seem to be generating some online interest, I’m linking to the recipe here that I based these on. I followed it mostly to the letter, although expanding it somewhat and using bittersweet shavings on top, as well as adding one drop of green dye. Go easy on the color, and the mint. We stayed at the recommended 1/8 teaspoon and they were very minty. I preferred the icing better at 1/16, but my mint-loving scout wanted the whole shebang. Go big or go home.
